nitrogen A gas comprising about 80% of the atmosphere; in agriculture the term ‘nitrogen’ is used to refer to ammonium salts and nitrates as plant fertilizers, and in nutrition to proteins and amino acids as nutrients, and to urea and ammonium salts as excretory products.
