"Make me an instrument of your peace."

These words are attributed to St. Francis of Assisi, a 13th-century friar who abandoned his privileged upbringing to wander northern Italy, advocating peace and concern for the poor.

In his short life, he established numerous religious orders, including the Poor Clares and forerunners of the Capuchins, whose coffee-colored robes inspired the name of the espresso drink cappuccino.
