Red meat remains a firm fixture on consumer shopping lists in the UK despite the Foot & Mouth and BSE crises that have hit the industry. Overall meat consumption in the UK, including poultry, rose by 12% during the decade to 2000 with red meat consumption remaining constant. However, the type of cuts and the occasions for eating red meat are changing along with changing demographics.
Figures from Taylor Nelson Sofres' Family Food Panel show that 10.1 million households in the UK reduced their red meat consumption by 10% between 1999 and 2001, while 9.7 million households ...
