In Part 1 of this series [1] the authors point out the growing consumer awareness of trans fatty acids due to their antinutritional effect in food products. New FDA labeling law proposals [2] for foods containing these lipid forms will draw further attention to trans isomers. Earlier research [3,4] has revealed that some monoene trans fatty acids inhibit the [delta]5 and [delta]6 desaturation of polyunsaturated fatty acids; i.e., the metabolic pathway to important prostaglandin formation.
