Thanks to a surge in supplies of fresh fillets, the adaptable tofu of fish is popping up everywhere

It's white, mild-tasting and available 52 weeks a year -- at an increasingly reasonable price. It's also incredibly versatile. You can steam it, fry it, grill it, poach it -- even eat it raw.

Thanks to a huge increase in supply, tilapia is inexorably making its way into America's collective seafood consciousness via menus and retail seafood cases across the country.

Of course, while tilapia consumption has come a long way, it still has a ways to go ...
