Ginger: Of all the spices associated with the holiday season, none can match the exotic cachet of ginger. Its name is as lovely as its appearance is gnarled and homely.
The Sanskrit word from which it derives means "horn root." In English, too, ginger is sometimes called "ginger root," but it isn't a root at all. It is the underground stem, or rhizome, of a tropical plant that resembles an iris with yellow and red flowers. Its flavor is a complex blend of citrus and herbal notes overlaid with heat.
