AS a child in rural Texas, Ruth Simmons spent hours in the kitchen watching her mother shell peas, shuck coin and soaking up her lessons about living right. That was a special kind of education, but Ruth had bigger dreams: She wanted to go to college. Her mother could make no promises. "She said, `Possibly if you get a scholarship you can go,'" the 55-year-old recalled at a news conference last fall. But her mother's eyes, Simmons says, revealed her doubt.
