If you like rice pudding, you will love this Pina Colada Rice Pudding. Pina Colada rice Pudding is made with coconut milk, pineapple and a touch of rum. It really brings a creative dessert to the table.

PINA COLADA RICE PUDDING 

 
2 cups cooked rice 
2 cups milk 
2 eggs, slightly beaten 
1/4 cup coconut milk 
1/4 cup sugar 
1/4 teaspoon salt 
1/3 cup rum 
2 tablespoons packed brown sugar 
1 teaspoon cornstarch 
1 8-ounce can pineapple 
  chunks in juice 
1 teaspoon butter or margarine 
1/4 cup flaked coconut 
Maraschino cherries
