By most accounts, chai first hit the American market in the 1960s, appearing in natural foods markets and cutting edge cafes in places like Santa Cruz, California and Boulder, Colorado. Brought to the U.S. by people like Heather Howitt, president of Oregon Chai, who traveled to India and upon returning home, found herself craving the sweet, milky, tea-based beverage of those lands.
