A lot has changed since 1988, when Charlie Palmer opened Aureole (Ivy '97) in a New York City brownstone. Today, Palmer operates 11 restaurants in seven cities, a chain of wine shops and a pair of boutique hotels. Ever evolving his brand, Palmer announced plans in 2007 to move Aureole into the new Bank of America Tower at One Bryant Park.
