Sumac, also spelled sumach or sumak, derived from the Arabic summaq, may be the last of the great condiments still to be introduced into the West. Yet, Middle Eastern cooks have employed it for thousands of years as a replacement for lemon juice or vinegar. This somewhat sour seasoning obtained from the Rhus coriaria, a species of the sumac tree, is still as indispensable to Middle Eastern cuisine as it was to the kitchens of the Sumerians and ancient Egyptians.
