A growing number of food plants are using bioluminescence technology to monitor sanitation. Bioluminescence occurs when the luciferase enzyme, often found in the flash of a firefly, meets adenosine triphosphate (ATP) which signals the presence of indicator organisms. Dirty surfaces will project different levels of ATP depending on the food product while clean surfaces with minimal ATP project similar amounts of light.
