Omega-3 fatty acids are essential fatty acids that offers protection against cardiovascular disease. However, many consumers are deprived of its health benefits due to the absence of fish in their diet which is its primary source. To solve this problem, Nutley, NJ-based Roche Vitamins has developed a process for extracting the omega-3 fatty acids from fish without unpleasant odors or heavy metals. The extracted oil is purified, deodorized and stabilized with an antioxidant to produce a bland oil that can be incorporated into a wide variety of foods.
