Sheep producers can supply the Easter lamb market by growing a breed from St. Croix, Virgin Islands. The normal breeding cycle of sheep does not enable the lambs to reach an acceptable weight of approximately 110 pounds by Easter, which is when lamb sales peak. St. Croix sheep do not have a seasonal breeding pattern in the Virgin Islands. The sheep, which have a high tolerance for heat, do not grow wool. This reduces shearing expenses and eliminates the lanolin taste in mutton.
