ONE of the major biological roles of selenium in broiler chickens is as an antioxidant to prevent oxidative stress. The main form of the enzyme glutathione peroxidase in poultry is selenium dependent, and this provides important antioxidant protection to cells and tissues as a first line of defense against oxygen free radicals (e.g., soluble peroxides) that are constantly produced during metabolism but that increase physiologically during stress conditions (Surai, 2002).
