ESTHER Roach was a woman with a big laugh.

But an even greater heart. Her hearty laugh would fill the room at her Scotland Road home, where her family would gather every Sunday for lunch.

To this day, her family still doesn't know how she managed to stretch one chicken between so many people; but everyone remembers a plate piled high and made with love.

The daughter of George and Katherine, Esther was born in the Scotland Road area, where she grew up with her sisters and brothers.
