To a devoted food fan, the crocuses of April stir thoughts of more than spring. Crocus blooms can turn an epicure's appetite to saffron -- the millennia-old spice that is the most famous fruit of the purple crocus.

Since the time of early Egypt, saffron has been the spice of pharaohs, maharajas and kings. It is a staple in the higher cuisines of Egypt, Morocco, India, Pakistan, Afghanistan, Iran and Turkey.
