Microbial preservation: a food science view.

Food manufacturers have to ensure that their products are free from microbial contamination which may spoil their product or poison the consumer. Food preservation techniques available to the food processor include the more common heat treatment procedures, the use of high pressures, the addition of microbial inhibitors and the use of weak organic acids that stop microbial growth. Manufacturers can also use the Hazard Analysis and Critical Control Points system of checking microbial contamination during food processing.
