Industry sources smoothies have year-round appeal, but in spring they truly come into their own. They offer a realm of flavors, including sugar-free versions, to help specialty coffee retailers enhance their profit margins with these higher-priced, high-value items.

"Smoothies give cafe operators a way to increase their business throughout the day," says Stacy Cooper Dent, senior communications manager for Torani. "Eighty percent of coffee sales take place in the morning, so this is way to boost traffic, to extend your business the afternoon."
