Pythium irregulare is an oleaginous fungus that is capable of producing essential fatty acids (EFAs) when grown on a waste product of flax shives. EFAs are important to the human body because they confer cardioprotective effects--reducing hypertension, arrythmias, and the occurrence of sudden death. Furthermore, the human body cannot produce them, so they must be consumed, and therefore, a commercial source of EFAs must be found. One method is to grow a eukaryotic organism by fermentation.
