The food additives industry is growing steadily and said to be recession-proof. Industry forecasts are for a 5.6% annual growth through 1996, when it will reach $3.5 billion worldwide. Consumers are demanding food additives that add flavor and quality to their food, not just nutrients. Manufacturers of food additives say that the orders from food manufacturers reflect this need. Flavors continue to be a growth area as microwave food and low-fat food continue to be popular. Entry into the fat-free market has been shaky because consumers want low-fat and good taste at low prices.
