Cub Foods bills itself as "the store next door," but the Stillwater, Minn.-based retailer is as much visionary as it is neighborly. Cub is continuing to expand the operating space and range of products in its delis, while responding to the specific preferences of shoppers in each location.
"Years ago, the basics of the deli were meat, cheese and salads," says Mary Jo Nelson, director of deli for Cub Foods West. "But our offerings have grown substantially."
