Agriculture Secretary Mike Espy recently issued a warning to beef packers who fail to meet hygiene standards: "We will not settle for the status quo in meat inspection."

Espy issued the warning at a news conference, at which he released results of a surprise inspection of 90 slaughterhouses. Espy also announced measures to improve meat safety.
