Agricultural Research Service scientists Robert H. Gallavan and Samuel W. Coleman, working at the service's El Reno, OK, Grazinglands Research Unit, found that feed type can affect Angus steers' meat composition. The researchers fed one group of steers primarily forage and another group primarily grain. They found that, though calorie intake for both groups was the same, the forage-fed animals produced leaner, tougher meat.
