Wine caves: the coolest for barrel aging.

Caves, man's earliest shelter and first wine cellar, are reaching new heights (or should we say depths?) of coolness in the U.S. wine industry. A 2003 report estimated that, since 1998, some 79 wine caves had been built in Napa and Sonoma counties, bringing the region's total to around 115. By 2005, a Napa planning official reported that cave building in that county was increasing by 10% each year.
