Ideally, specialty coffee retailers would serve up great coffee along with their own home-baked pastries. Customers would rave, retailers wouldn't have to worry about vendor deliveries, and all would be right with the world. But reality is often at odds with this heartwarming vision. Baking takes space, skill and someone willing to get up at four in the morning, or earlier. And many cities have plenty of bakeries that can fill a coffee retailer's needs.
