Recipe Doctor: This cheesy French onion soup won't kill you.

Q: I like French onion soup, but the sodium is quite high. Is it possible to make it with less salt?
A: I'll do you one better. I'll help you reduce the sodium and bring the fat down a notch or two. This may sound suspiciously healthful _ but it really does taste good. The recipe calls for 3 tablespoons butter to saute the onions. I cut this down to 1 tablespoon and switched to olive oil. I also added in some beer toward the end of browning the onions for a little added moisture. For the sodium, your best bet is to use reduced-sodium or "less salt" ...
