Waxes on produce: holding a candle to the controversy.

Row after row of bright, beautiful produce--often up to 200 types--line today's supermarket bins, representing fruits and vegetables from all over the world.

However, many fruits and vegetables available at the marketplace have been waxed, primarily to reduce post-harvest moisture loss that would result in shriveled, unattractive produce. Waxes are also used to make fruits and vegetables shine.

Ironically, naturally occurring protective wax coatings on fruits and vegetables are usually removed during routine post-harvest detergent washings.
