It's barely 7 a.m. when "The Buck" pulls a 1,000-pound plastic tub of crushed ice across the tile floor at the Pike Place Market. He tugs it by the rope handle like a sled to the front of the empty counter at City Fish.

With a snow shovel, he scoops the ice into steel bins that he'll soon fill with wild king salmon from Alaska, tuna fresh from Hawaii, California Dungeness crab, mussels from Penn Cove.

The shovel crunches into the white ice.

The faint smell of cooked crab creeps into the air.

The silver skin of salmon ...
