Onions can be divided into two categories: spring/summer fresh onions and fall/winter storage onions. People favor the former so much that part of the Vidalia crop, which commands a higher price than most onions, are stored as apples are over winter -- in controlled atmosphere storage. This retains the sweet onions' moisture content long past harvest.
