One thing that distinguishes Portugal's Alentejo region is the abundance of dense fields of cork trees that twist and darken with age as their barks grow knobby. The unspoiled area still depends heavily on cork production, which remains a time-consuming and long-range process: Trees can be harvested only every nine years, and once the bark has been stripped, the first usable growth appears 25 to 30 years later. This lack of heavy industry and attention to time-honored processes has helped to preserve the Alentejo region's natural appeal.
